Fermented CRANBERRY SAUCE

t’s the cranberry sauce you know and love but with the added bonus of probiotics!! This is the perfect swap to your canned cranberry sauce, but it’s also DELICIOUS as a spread on sandwiches, a punchy addition to drinks, or even as a dessert topping. The best part? You don’t even need to cook anything!! You just pop it all in a jar and let it do its thing.

Ingredients

12 oz bag of organic cranberries
1 Juice of orange or 2 mandarine oranges
1 Zest of orange or 2 mandarine oranges (2 tsp)
1/2 cup RAW honey
1/4 tsp salt
1 cinnamon stick optional

Directions

1.
Add cranberries to a sterile jar and mash until basically every single cranberry has been smooshed.

Add in remaining ingredients and stir to combine.
1 Juice of orange or 2 mandarine oranges
1 Zest of orange or 2 mandarine oranges (2 tsp)
1/2 cup RAW honey
1/4 tsp salt
1 cinnamon stick optional

Close the lid of the jar and either burp daily OR close the clasp with a rubber band - this will ensure that any excess gas can push out and escape.
4.
Let the jar sit in a room temp area out of direct sunlight for 2-7 days. I let mine go for 6 days, but my house is also pretty cold right now.
5.
You should see some bubbling come to the surface when you open the jar. Also visually you should see that everything has softened blended together.
6.
Once it is to your desired fermented level just pop it in the fridge until you’re ready to use it.

Notes

* Cook time is 5-10 minutes, basically just time to combine everything. Buttttttt it takes DAYS to ferment. Just keep that in mind! * Raw honey is necessary here to facilitate fermentation. * You can sterilize your jars by just washing them in the dishwasher. If you don't have a dishwasher you can either dunk them in boiling water OR wash with soap and HOT water.
